The Admiral’s Favorite
Maple Nut Brittle

½ cup sugar
½ cup REAL maple syrup
½ cup butter
A wee pinch o’ salt
½ dram GOOD single malt Scotch (optional)
2 cups nuts, roasted and coarsely chopped
Drop sugar, maple syrup, butter, and salt into a pot with high sides and over medium heat. Stir until butter melts.
Heat until mixture reaches 300˚F, hardball stage.
Remove from heat and stir in Scotch and nuts.
Pour out onto an ungreased cookie sheet.
Let cool, else you’ll burn your tongue!
When cool, break into large pieces.
Eat. (Do I have to tell you that?)
I’ve used pecans, walnuts, and almonds. All are fantastic!
